"The one dish I always begged my mom to make for, quite literally, every holiday/special event is one called “pozole.” It is a traditional Mexican dish involving hominy and, most commonly, some type of meat (usually pork). My family seasons it with oregano, lettuce/cabbage, basil, lime, onions, radishes, and salsa. You can find it at any Mexican restaurant and there is different types such as white, red, and green. My mom always made red pozole, though I may have tried green pozole a handful of times.

 

It is so special to me because every time I hear it, I think of the pozole my mom makes. Hers is so good that I can hardly ever find one that even somewhat compares to it anywhere else. Since we make it for every special occasion, I correlate the dish with happy memories full of love, laughter, and most importantly, family. It is a staple for Mexican culture so it was the first dish to come to mind when I was told to choose a dish that means a lot to me."
